Vegan cheesy baked Broccoli and parsley dip

Ingredients

  • 1/2 head of fresh broccoli, separated into florets with some stem

  • 1/2 bunch of parsley, leaves only (save stems though)

  • 2 sheets of Simply V Vegan “GENIEßERSCHEIBEN Kräuter” cheese

  • 2 tsp of salt

  • 1 tsp of black ground pepper

  • 1/2 cup of good quality oil

  • 1 tbsp of cooking oil for baking

  • 2 cloves of garlic, peeled and roughly chopped

  • Tortilla chips or pita bread fro serving

Method

Pre heat your oven to 200 degree Celsius. Place the broccoli on a baking tray with some roughly chopped broccoli stems. Sprinkle with salt and the cooking oil. Bake for 10-15 minutes or until broccoli begins to brown and crisp.

Remove from the heat and place in an electric mixer (food processor or blender) along with the parsley, garlic, black pepper, salt and a splash of water. Blend until begins to form a corse and dry mix. Add the oil and mix well again it becomes smoother. If you need to add more oil or water, do so to form this consistency. Place in a bowl and tear the cheese sheets roughly into the dip. Heat in the microwave or in a saucepan until the cheese melts. Mix well so it I evenly dispersed. Serve immediately with any of your favourite dipping tools - pita, tortilla chips, along side a quesadilla or carrot stick. Enjoy
