Australia is one of a kind.

The natural spanning coral reef, turquoise water that laps at your feet in the middle of the city, views that can make even the most talkative person speechless and last but certainly not least, the mind blowing gastronomy and culinary world.

The food industry has become a niche market and certainly one of the biggest tourist attractions for all. Restaurants and chefs take chances and look at food as an edible creative art form. Edition Coffee Roasters, located in the back streets of the inner city suburb of Darlinghurst pushes the boundaries in every dish by merging together the traditional Japanese cuisine with an up market cafe culture vibe.

The pictures above speak for themselves. With a small menu, you can be assured that each and every dish is delivered with the highest attention to detail and hand crafted to perfection. The menu does change seasonally but I have to mention the three dishes what I was blessed to try because it was beyond amazing - first was black charcoal toast with king fish marinated in lemon juice, radishes and a soy marmalade. Second was chicken and corn bao bun stuffed with crispy salted seaweed, julienne spring onions and fried noodles. Last, and the most melt in your mouth dish was charcoal and black sesame seed pancake in a mango coconut sauce, topped with house made vanilla ice-cream and edible flowers. Sound good?
