Roasted Pumpkin with Smoked Almonds and Flax Seed

PUMPKIN SEASON

Yes, pumpkin season means halloween... but once you grow older pumpkin season means warming dishes involving woody herbs, hot oven trays and the beaming orange beckon of naturally flavourful nutrients. 

This roasted pumpkin salad with smoked almonds and flax bursts with winter flavours without being overly complicated - here’s how to lay this dish on the table to warm you inside and out.

Roasted Pumpkin with Smoked Almonds and Flax

Ingredients 

  • 1 medium pumpkin, sliced

  • 2 garlic cloves, roughly chopped

  • 1 medium onion, thinly sliced

  • 2 tbsp olive oil

  • 1 tsp salt

  • 3 sprigs fresh thyme

  • 2 tbsp flax seeds

  • 40 grams smoked almonds (I use I Love Snacks)

  • Your choice of salad

Method

Place the pumpkin, garlic, onion, salt, oil and thyme on a tray and bake for 15-20 minutes in an oven on 200 degrees Celsius. Flip the ingredients once or twice to cook evenly. Remove and set aside.

Assemble the salad by placing leaves from your choice of salad on a plate, topping with the slices of pumpkin, almonds and sprinkle with with flax. Dress with a basic mustard vinaigrette.
