Green Pea & Spinach Soup

Ingredients

  • 2 cups frozen green peas

  • 1 1/2 cups frozen spinach

  • 2 garlic cloves

  • 2 cups veggie or chicken stock

  • 1 tsp salt

  • 1 tsp dried thyme

  • 1/2 cup coconut cream, plus extra for serving

Fried onion

  • 1 small red onion, cut into thinly sliced half moons

  • 1/2 cup frozen peas

Method 

In a medium pot, place the peas, spinach, garlic and stock on medium high heat and bring to a simmer. Add the salt, thyme and coconut cream. 

Blitz with a hand help blender in the pot until smooth and creamy. Return to the heat and bring to a gentle simmer. 


For the onions - place the onions on a pan and cook with 1 drizzle of oil for 2 minutes and then add  the peas and cook until slightly golden and crunchy. Sprinkle on top once the spoon in dished out into bowls, along with baby beetroot leaves or micro greens.
