It’s only the end of April and I am already feeling like cocktails are needed like it’s Christmas time. Why? Um, I don’t know but nor am I feeling like I (and we) need an exact reason. This delicious hibiscus gin lemon soda is certainly one for the book because not only is it absolutely to die for and so refreshing. It’s also good for you!! Yup, your read right. Let me explain…

Who doesn’t love a cooling, refreshing, citrusy cocktail? How about if I added to that list ‘good for you too’? Hibiscus is a beautiful way to flavour and colour cocktails (and many other dishes). The colour is as if you are using a whole tube of food colouring except it’s totally natural.

But the reason why this cocktail is good for you lies not only in the use of hibiscus as a natural flavour and colour element but because of this brand - Drink Churchill. This post is not sponsored. I actually just believe and enjoy this drink myself.

Hibiscus Gin Lemon Soda

Ingredients

1/2 cup dried hibiscus

1/2 cup water

1/2 cup sugar

1 Drink Churchill lemon recovery soda water

2 x 4cl gin

Lemon whole moons to serve

Ice

Method

In a small pot, place the dried hibiscus, sugar and water on medium heat and bring to the boil. Simmer for 3-4 minutes. Remove from the heat and leave too cool. Spoon out or strain the hibiscus leaves from the liquid. Keep some of the flowers for garnishing at the end.

Place a generous amount of ice in two long glasses. Add 4cl of cool hibiscus syrup into each, 4cl gin in each and top with Drink Churchill soda. Serve with lemon slice and hibiscus flowers.
