Manukua Honey Banana Loaf with Whipped Manoka Ganache

Ingredients

150 grams butter, room temperature

4 tablespoons caster sugar

1 x 40 gram jar Manuka Royale honey

2 eggs

1 tsp vanilla extract

10 tablespoons self raising flour

1 tsp baking powder

1 very ripe banana, peeled and mashed

Ganache

200 grams cream

3 tbsp dutch 70% coco powder

2 tsp Manuka Royale honey

Method

Line a small loaf tin (6x2) with butter and then flour. Tap the tin to remove excess flour. Preheat the oven to 160℃.

In the bowl of an electric mixer fitted with a whisk attachment, whisk together the butter and sugar. Add the Manuka honey, vanilla and the two eggs, whisking on high for 2-3 minutes or until doubled in size.

Once pale and fluffy, add the flour and baking powder, mixing on low until incorporated. Add the mashed banana and fold in.

Pour the batter into the prepared tin, tap lightly and place into the oven. Bake for 25-28 minutes or until golden on the top and when a skewer is comes out clean. Move from the oven, place on a wire rack for 5 minutes before flipping, tapping and removing the tin. Leave too cool completely.

Meanwhile, whip the cream until doubled in size and fluffy. Add the coco powder and honey, whisking until incorporated. Chill until needed.

Once the loaf is completely cool, top with the prepared ganache. Slice and enjoy.
